Will fuel cells take over from batteries?

For normal family cars, probably not. Batteries add weight and reduce range, but most drivers can live with the compromises. However, the very point of a hypercar is that it is uncompromising. For hypercar drivers, hydrogen is the ideal solution: it is the only way of combining the driving characteristics of a traditional hypercar with the need to provide zero-emissions.
